Denise's Western Omelette


Frozen Hash Browns (defrosted)
3 Large Eggs
¾ Cup Milk Heated (whole to skim is fine)
1 Package Jimmy Dean Original Sausage – Browned  (Crumbles are best)
1 Can Mild Green Chilis
1 8oz Monterey Jack Cheese (Grated)
½ 8oz Package Grated Cheddar Cheese
Salt and Pepper (I uses liberal shakes of Natures Seasoning)

Preheat oven to 400.

Spray 10” pie plate w/Pam.  Pack with Hash Brown potatoes going up sides.  Drizzle butter over crust (I use ‘I Can’t Believe it’s Not Butter’ spray).  Bake for 10 minutes.

Beat the eggs.  Slowly add milk.  Add sausage, jack cheese and green chilis.  Season as desired.

Pour mixture into pie crust.

Bake 25 minutes, then sprinkle top with cheddar cheese and bake for 10 additional minutes.

Let sit for 10 minutes before serving.



Here is the recipe for the Western Omelet.  I believe it was originally called some kind of quiche, but didn’t think your dad (in the early years) would eat it if I called it by its true name!

It’s a great dish for a crowd and you could probably double the recipe and put it in a 9x13 casserole.  Any kind of mild sausage would work.  I’ve always used Jimmy Dean and now they have packages of precooked crumbles which saves a lot of time.  

Oh, I usually sprinkle the crust (before baking) with Natures Seasoning, but you could just salt and pepper it.
