Easy meal ideas



Simple meal ideas: 

QUICK STEAK DINNER:  done in 20 minutes: 

Steak tips (pan fried in a little olive oil, salt and pepper) Then slice on the diagonal. 

Meanwhile peel and boil a few potatoes, then smash in pan with a pat of butter and dash of milk, and plenty of s&p. 

While meat and potatoes are cooking, make a green salad and steam a veggie (broccoli or asparagus)

CHICKEN WITH LEMON AND THYME:

meal #1

Rinse and pat dry an oven stuffer roaster.  Place into 9x13 pan, drizzle with olive oil, sprinkle with dried thyme and s&p, and stuff with slices of lemon.

Roast uncovered until pop-up thermometer pops (about 2 1/2 hours).   Turn off oven and leave chicken in there to rest while you quickly prep the rest of the meal: egg noodles or rice; green salad; and a veggie such as green beans or green peas.


Reserve all leftovers.   After dinner or the next day, make a simple stock by simmering chicken carcass with a quartered onion, a couple of celery stalks, a few carrots.  Strain the stock.  (if you make the stock the night before you have the added benefit of being able to remove the layer of fat once the stock has cooled).

Meal #2: SOUP

Next day, make a nice soup.  First simmer some carrots in the stock, and then add your leftover chicken, noodles or rice, and veggies from the night before.  Add some dried parsley and a dash of hot sauce.  You can also add a can of diced tomatoes.  Taste for seasoning.  Serve with bread or cheddar cheese scones and you've got yourself a frugal and tasty second meal from the chicken.
